
Besan chilla
Ingredients : 1 cup gram flour (besan), 1/4 cup each veggies (onions, tomatoes, coriander leaves),1/2 tsp chopped green chillies 1/2 tsp chopped ginger, 1/2 tsp jeera, 1/2 tsp red chilli powder (optional), pinch of turmeric salt to taste
Method
First add 1/2 cup water to besan and whisk, add rest of the ingredients and add additional 2-3 tbsp of water. Whisk until the batter has smooth flowing consistency. Heat a pan on low to medium heat. Brush with ghee or oil. Take a ladle full of batter and spread on the pan. Flip the chilla when base gets light golden. Use more oil for crispy edge.

Ragi dosa
Ingredients : 1 cup ragi flour, 1 cup rava, 1 inch ginger finely chopped, 1 green chilli finely chopped, few curry leaves, 2 tbsp coriander, 1 onion, 1 tsp jeera, 1 tsp salt, 3.5 cup water, 1 cup curd (optional), oil/ghee
Method : In a large mixing bowl, add both flour, add the spices & veggies. Add 1-2 cups water and mix well. Rest batter for 15-20 minutes. Add 1.5 cup water until consistency is flowing. Pour the batter over a pan and sprinkle oil/ghee. Once the dosa turns brown, flip over and cook. Serve with chutney of choice.

Moong dal upma
Ingredients : 1/2 cup moong, 1/2 cup dal,3 /4th cup onion(chopped), 2tbsp Lemon juice, curry leaves 1 strand, Green chillies 4-5, Mustard seeds 1 tsp, Coriander leaves 3-4 strands, oill 1 tsp, Salt to taste
Method : Soak moong dal for 1 hour.Grind with salt without adding water(if required, add very less water) to a coarse paste. Shape into small balls and keep on a preheated idli stand or normal vessel adn cook on steam. Powder the cooked balls with hand to remove big lumps. Heat oil and add mustard. When it starts spluttering, add curry leaves, green chillies. Fry for some more time. Add onion and fry till they turn slightly brownish. Add moong daal powder prepared already and a little salt. Add coriander leaves and lemon juice.
