Homemade mayo
Ingredients : 1 egg, 1 tbsp vinegar, salt, olive/avocado oil as required, 1 tbsp lemon juice, 1tsp mustard paste (optional)
Method : Add all ingredients to a blender except oil. Blend for 20s. Slowly add in oil and blend for 20s. Keep adding every 20s until a thick creamy consistency is reached. Add salt, vinegar, lemon juice according to taste.

Chilli mayo
Ingredients : 1 egg, 1 tbsp vinegar, salt, olive/avocado as required oil, 1 tbsp lemon juice, 1red chilli/ 1 tsp chilli paste, 1 clove garlic (optional)

Chilli tomato sauce
Ingredients : salt, sesame oil, 1 tbsp lemon juice, 3-4 dried red chillies, 3 garlic cloves, 2 tomatoes (small)
Method : Boil tomatoes until skin comes off. Remove skin &
seeds once cooled. Add all ingredients including cooked tomatoes to a blender to a paste. Heat oil in a pan and lightly fry the paste until a dark red colour is formed. If preserving top up with more oil & refrigerate once cooled.

Mint yoghurt sauce
Ingredients : salt, sesame oil, 1 tbsp lemon juice, 3-4 dried red chillies, 3 garlic cloves, 2 tomatoes (small), 1 bunch fresh coriander, 1 1⁄2 cups fresh mint leaves, 1 green chill, 1 tbsp tamarind/ lime juice, 1 clove garlic, 1 cup yoghurt
Method : Add all ingredients to a blender except yoghurt until a thick creamy consistency is reached. Add salt and finally yogurt according to taste.

Creamy peanut sauce
Ingredients : 1/2 cup peanut butter, 1/2 cup water, 2 tbsp vinegar, 2 tbsp light soya sauce, 2 tbsp raw honey, 1 tsp sesame oil
Method : In a mixing bowl, use a fork or whisk to mix the peanut butter, 1/4 cup water, rice vinegar, soy sauce, maple syrup, and sesame oil. Add more water if needed according to consistency
